Spiced Spinach Soup with Cottage Cheese Croutons

Soup is my all-time favorite but in winter, it really completes me, So today I am preparing the Spiced Spinach Soup, So here is your classic spinach soup served with mouth-watering cottage cheese croutons.

How to Make Spinach with Mushroom and Cheese Sauce-

  • Boil water and add the spinach and then put in cold icy water for a while and Do not throw away the water used to cook the spinach.
  • Clarify the eggs and Drain out all the water from the spinach completely.
  • Add the spinach, 1 Tbsp cream, 3/4 egg yolk, salt, pepper and a hint of nutmeg in a mixer and blend together.
  • Add little bit butter on the dish and some grated Parmesan cheese into the dish.
  • Place the spinach mixture smoothly into the dish.
  • Place the spinach water on heat and put it into a big bowl and then Place the dish with the spinach mixture inside the water for it to cook.
  • Put all this inside the oven for 15 minutes at 180-degree c.

And For the Mushroom and Cheese Sauce:

  • Put the mushrooms in water and Cook till they are nice and moist.
  • Add a bit of butter into it.
  • Add the sauteed mushrooms into the sauce, mix well and remove from heat.
  • Place this rich and cheesy sauce over the baked spinach.

Baked Spinach with Mushroom and Cheese Sauce

  • Heat up some mustard oil to smoking point, splash a few drops of salted water to get the mustard oil in true form to cook. It takes away a lot of the strong flavors and bitterness of the oil.
  • Add the mustard seeds, green chilies, ginger, mustard seeds as they crackle, add the turmeric powder followed by curry leaves and chopped onion and chopped fennel.
  • This is an aromatic tempering for the soup.
  • Cut the cottage cheese into cubes. Put in a tray and season with garam masala, salt, pepper and olive oil. Bake in the oven for 15-20 minutes at 180 C.
  • Add the soaked lentils and the vegetable stock and simmer for 12 to 15 minutes till the lentils and the veggies are soft.
  • You can then add the washed and chopped spinach, dill and methi.
  • Season to taste and simmer for not more than a minute or so.
  • Once it is cooked add some ice and blend into a chilled soup.
  • Ladle the hearty soup into large bowls/glasses and serve with crispy chaat masala flavored cottage cheese croutons.
